Ingredients
  

  • 1 cup plant based milk
  • 1 lemon
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • pinch salt
  • 4 apples

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch (23×23 cm) baking pan or a similar-sized baking dish
  • Add lemon juice to a plant based milk, stir and leave it for 5 minutes
  • In a bowl, mix flour, baking powder, soda, cinnamon and salt
  • Add oil to the milk and lemon juice mixture
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring until a smooth batter forms
  • Peel, core, and slice 2 of the apples. Mix them gently into the batter
  • Pour the batter into the baking pan
  • Slice the remaining 2 apples and arrange the slices on top of the batter
  • Sprinkle the 2 tablespoons of sugar evenly over the apple slices on top
  • Place the baking pan in the preheated oven and bake for approximately 55-60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean
  • Allow the apple cake to cool for a while before slicing and serving. Enjoy your homemade apple cake!
