Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch (23x23 cm) baking pan or a similar-sized baking dish
Add lemon juice to a plant based milk, stir and leave it for 5 minutes
In a bowl, mix flour, baking powder, soda, cinnamon and salt
Add oil to the milk and lemon juice mixture
Gradually add the dry ingredient mixture to the wet ingredients, stirring until a smooth batter forms
Peel, core, and slice 2 of the apples. Mix them gently into the batter
Pour the batter into the baking pan
Slice the remaining 2 apples and arrange the slices on top of the batter
Sprinkle the 2 tablespoons of sugar evenly over the apple slices on top
Place the baking pan in the preheated oven and bake for approximately 55-60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean
