Date Caramel
A delicious and healthier alternative to traditional caramel sauce. Date caramel is vegan, refined sugar-free, and can be used as a topping for desserts, pancakes, or as a dip for fruits.

- 1 cup Medjool dates 10-12 dates
- 1/4 cup Sunflower seeds
- 1/4 cup water
- 1 tsp vanilla extract
- pinch salt (optional, but recommended for flavor)
In a dry skillet, roast the sunflower seeds over medium heat until they turn golden brown and become fragrant. This should take about 5-7 minutes. Remove them from the skillet and allow them to cool.
In a food processor or blender, combine the pitted Medjool dates and 1/4 cup of water, and roasted sunflower seeds. Blend until you have a smooth date paste. Add a bit more water if needed to reach a creamy consistency.
Taste the date caramel and adjust the sweetness or saltiness to your preference. Add more water or salt if needed.
Transfer your sunflower seed date caramel to an airtight container and store it in the refrigerator. It can be used immediately or stored for up to a week.
