Date Caramel

A delicious and healthier alternative to traditional caramel sauce. Date caramel is vegan, refined sugar-free, and can be used as a topping for desserts, pancakes, or as a dip for fruits.

Ingredients
  

  • 1 cup Medjool dates 10-12 dates
  • 1/4 cup Sunflower seeds
  • 1/4 cup water
  • 1 tsp vanilla extract
  • pinch salt (optional, but recommended for flavor)

Instructions
 

  • In a dry skillet, roast the sunflower seeds over medium heat until they turn golden brown and become fragrant. This should take about 5-7 minutes. Remove them from the skillet and allow them to cool.
  • In a food processor or blender, combine the pitted Medjool dates and 1/4 cup of water, and roasted sunflower seeds. Blend until you have a smooth date paste. Add a bit more water if needed to reach a creamy consistency.
  • Taste the date caramel and adjust the sweetness or saltiness to your preference. Add more water or salt if needed.
  • Transfer your sunflower seed date caramel to an airtight container and store it in the refrigerator. It can be used immediately or stored for up to a week.
